Side Orders: Brainerd BX adds to cooking classes

THE YEAR’S LINEUP of classes for Cooking Live at the BX looks extremely impressive, offering an array of choices for those of you who want to learn more about cooking or simply add a few new dishes to your culinary repertoire.

For the first time, the classes are expanding to two new locations. Classes will still be held in Brainerd Baptist Church’s community center, known as Brainerd Crossroads, the BX. But this year, Cooking Live will travel to Silverdale Baptist Church, 7236 Bonny Oaks Drive, and First Baptist Church, 340 Church St. in Cleveland, Tenn., for several sessions.

Classes are $10 per person. Call 894-2100 for times and reservations.

Here’s the schedule.

Brainerd BX

* Oct. 7 — Crockpot Cooking: Great slow-cooker recipes that are sure to please.

* Nov. 11 — Let’s Talk Turkey: Unlock the mystery of simple holiday fare.

* Dec. 2 — Home for the Holidays: Quick, healthy meal ideas to get you through the holiday rush.

* Jan. 6 — One-Dish Dinners: Ring in the new year with one-dish comfort foods.

* Feb. 3 — Cooking for Two: Simple dishes designed with Valentine’s Day in mind.

* March 3 — Asian Fusion: A mix of Thai, Chinese and Japanese cuisine ideas simple enough for the family table.

* April 7 — Spring Sensations: Maximizing seasonal produce by examining the concept of whole foods.

* May 5 — Tex-Mex: Fabulous fajitas with all the fixings.

* June 2 — Tasty Tropical Treats: Smoothies, salads and fresh fruit recipes for summertime.

* July 7 — Great Grilling: Fresh new grilling recipes for outdoor entertaining.

* Aug. 4 — Beginnings and Endings: An appetizer/dessert recipe swap where you do the cooking.

First Baptist Church, Cleveland

* Sept. 11 — Crock Pot Cooking: Slow-cooker cooking for breakfast, dinner and dessert.

* Dec. 4 — Holiday Entertaining Made Easy: Simple recipes for entertaining.

* Jan. 8 — Cooking for the Week: Planning, preparation and cooking.

* March 12 — Mama Mia!: Italian cooking basics.

* April 9 — Great Grilling: Ideas to liven up your grill.

Silverdale Baptist Church

* Oct. 2 — Cooking for the Week: Planning, preparation and cooking.

* Feb. 5 — Crock Pot Cooking: Slow-cooker cooking for breakfast, dinner and dessert.

* May 7 — Mama Mia!: Italian cooking basics.

That’s a strong lineup, so be sure to mark your calendars for the classes you want to attend and make your reservations early. I’ve been to one of these classes and know how popular they have become.

STILL NO WORD AS to where to find fresh eggs in the Highway 58 area. But I did get a few e-mails telling me a little about chicken husbandry and, thanks to you all, I’m now convinced I want to raise a few chicks myself. Now, I just need to convince my husband.

However, a warning to any of you wanting to make it more than a hobby. If you are considering selling them to the public, William Lapoint e-mailed me to say that there’s a little more to it than just putting a sign outside.

“In order to sell eggs legally, you have to be inspected by the Tennessee Department of Agriculture,” he wrote. However, he added, it is not hard to pass. “You need a double-basin sink, a chlorine-based cleaning solution along with the manufacturers sheet showing what concentration to mix it, test strips to ensure clean eggs and a separate fridge to store them in. They inspect once a year, and it costs $50.”

Good to know.
