On the menu: Food Works

* What: Trout is big at Food Works, and the latest creation from executive chef Jeremy Allin is a whole trout from Pickett's Trout Ranch of Dunlap, Tenn. It's wrapped in bacon, seared, then finished in the oven. It's served on a bed of okra succotash and topped with crawfish vinaigrette. "It's about as fresh as you can get," said operating partner Troy Sutton. "There are a lot of flavors going on. The trout sells itself, and you can't go wrong with bacon on anything."
