Scramblez Cafe in Spring City offers western-inspired varieties

Inspiration behind the name: Lloyd said that his aunt had helped with the original restaurant's name, and that he and his wife have since franchised and trademarked the name. Their two California restaurants are named Scramblez Grill & Bar and Scramblez Quartz Hill, he said.

Startup investment: To acquire the prime, corner building on Front Street, Lloyd said it cost approximately $100,000. His 15 years of restaurant and bar experience, he said, will help allow the "food to speak for itself."

Prices: Side dishes and beverages range from 69 cents to to $4.99 each, while the entrées range from $3.49 to $8.99.

Target market: Most of the café customers are Watts Bar Nuclear Plant employees and retired transplants to the Rhea County area.

Biggest hurdle: Purchasing and renovating the corner building created delays from their intended opening date in July, Lloyd said, but "finding suppliers to service Rhea County" with fresh products has created additional challenges.

Five-year goal: Without a hesitation, Lloyd said that he's "hoping that others will want to franchise elsewhere."
